Ingredients:
2 lbs. Irish Butter
3 oz. shallots, finely minced
1 oz. garlic, chopped
7 grams lemon zest, minced
Juice from 1 medium lemon
1/2 Cup White Wine
1 tsp. sea salt
1/2 tsp. white pepper
1/2 tsp. thyme leaf
1/2 cup dill weed, chopped
Directions:
1. Let butter sit at room temperature for several hours to soften.
2. Place all ingredients in mixer using the paddle. Whip mix until fully incorporated.
2. Roll 10 oz. of butter in parchment paper. Store in refrigerator.
